Saffron, the world’s most precious spice, shares an inseparable bond with the enchanting land of Kashmir. Aside from Iran and Spain, the cultivation of saffron finds its home solely within the reaches of Kashmir. While saffron is also grown in Kishtwar and Bhaderwah regions of J&K, these regions pale in comparison in terms of both quantity and quality of Kashmir saffron.

Picture saffron fields adorned with delicate pink blooms – a sight that evokes pure delight. Amidst these fields, men, women, and even children contribute, painting a visual masterpiece of dedication and togetherness. These fields grace both sides of the Srinagar-Jammu National Highway, an unignorable spectacle as one travels through Pampore.

Saffron’s significance transcends its picturesque appearance. With a plethora of medicinal and aromatic attributes, it emerges as Kashmir’s paramount cash crop. The journey from seed to saffron is a laborious one, and the yield is remarkably modest, rendering it a rarity of substantial value. Beyond its demanding cultivation process, the monopoly of Kashmir over saffron is cemented by the unique conditions required for its growth.

 

 

An ideal saffron haven calls for clay-rich soil at elevations of 5000 to 8000 feet above sea level. Rainfall between 30 to 40 cm, well-drained earth, sub-temperate climates, and a winter snow blanket are indispensable components. In this regard, fortune favours only the Pampore region of Kashmir, where these factors converge harmoniously, granting the saffron plant the canvas it needs to flourish.

The saffron planting season stretches between July and August, with the coveted prize being the stigma – the saffron thread – of each blossom. To amass a single pound of saffron, the essence of around 70,000 flowers is painstakingly collected – a testament to the meticulousness of the process.
